Halloween is just around the corner and Brindisa is only bring treats this year. From Monika's delicious pumpkin recipes, a few very tasty offers and a couple of suggestions for embracing the longer evenings. 

Halloween isn't just about sweet treats and fancy dress and as the clocks go back next Sunday, it's about rustling up comfort food that nourishes the soul. Below are some recipes that are sure to do so and help ease us into Winter. 

Spanish Recipes for Pumpkin

Each year around 18,000 tonnes of deliciously edible pumpkin gets thrown away as ghoulish faces are carved and the innards thrown out. Pumpkin should never be discarded or wasted as it is both nutritious and brings a fantastic flavour to dishes. From the seeds to the flesh, pumpkins are low in saturated fat, cholesterol and sodium. 

Pumpkin & Chestnut Soup

Monika's pumpkin and chestnut soup, or as it is known in Spain 'crema de calabaza y castanas', is the perfect recipe for Autumn as it is both chestnut and pumpkin season. La Castanada is the chestnut festival that is celebrated in the first week of November in many villages in Spain. The nuts are often roasted and served with grilled chorizo, washed down with cider and often used to make soups like this one.

When making this recipe make sure you select a pumpkin that has brightly coloured flesh - just like those used to carve on Halloween! This is so that when the pumpkin is blended with the chestnuts, the soup keeps as much vibrancy as possible.

CHORIZO & JUDION BEANS WITH RICH PUMPKIN SAUCE

Another way of making the most of your pumpkin flesh is with this warming, hearty stew. It is made with chorizo, judión beans and a rich pumpkin sauce. It's the perfect crowd pleaser which is ideal to make for a big group of friends and family at any Halloween or autumnal celebration!

This recipe is by Sophie, a food blogger called @thecornerplot and it is the perfect Spanish twist on the traditional British casserole. It also uses pumpkin wonderfully to create a dish filled with comfort!
