- Navarrico Judion Butter Beans
- Extra Virgin Olive oil
- Padrón Peppers
- Savoury Butter Crackers
- Add a generous amount of olive oil to a non-stick frying pan. When the oil is smoking, add the Padron peppers and fry until blistered. Remove to a plate and salt generously.
- Drain the butterbeans in a sieve, pour into a food blender and blitz until smooth. Season with sea salt and black pepper.
- Spoon the butterbean puree onto a plate, leaving pockets. Sprinkle over the padrón peppers. Add a little more extra virgin olive oil, a sprinkle of sea salt and black pepper and serve with crusty bread or savoury butter crackers.
