THE ESSENTIALS & RECIPE IDEAS
Brindisa Sofrito & Fritada sauces with spagetti
This is as simple and easy as it gets for a easy, delicious lunch or dinner.
Method
Simply put a pan of salted water to boil and add the spaghetti.
Slowly heat up a jar of either of the Brindisa sauces and after the pasta has been drained, add it to the sauce.
Additions: if this is too simple for you, use the sauce as a great base for a more adventurous pasta dish. Add some cooking chorizo to the sauce, or even some anchovies!
Navarrico Chickpeas and Perello Butterbeans
Here are some fantastic recipes that use these ready-to-cook beans.
BUTTERBEANS WITH WILD MUSHROOMS
MONIKA'S GO-TO FAIL SAFE MEAL
Pan fried white beans (from a jar in haste) with chopped fresh tomatoes, garlic, sweet onion and parsley. No sides, so I do add spinach for some green!
MONIKA LINTON'S THREE STORE CUPBOARD ESSENTIALS
Spanish Pulses | Without fail our larder has dry Spanish pulses (pardina lentil, chickpeas, butterbeans), completely essential for our household and has been for decades. We think, we plan, we soak, we slow cook, we enjoy - any time of the week - it's therapeutic.
Pimenton Smoked Agriduce | Not too hot, not too mild, paprika is just perfect for adding to one pot dishes, sprinkling over grilled anything and amazing in goats cheese on toast.
Saffron | for veg and soups. Delicate aromatic, use in small amounts so as not to make things too heady - adds such amazing colour and flavour.
MONIKA'S TOP TIP FOR COOKING AT HOME...
Think ahead and cook calmly. I often don't look at the clock - especially for weekday suppers - and find myself flapping to feed the household. The days I plan and consider I love, even after a long day's work, as for me it's a way of banishing the feeling of being on the treadmill of daily grind.
