Cañarejal is a torta style cheese with a soft, silky centre and a fresh mushroom aroma. The flavour is mild, slightly sweet and richly creamy.
Perfect for a dinner party, make sure you keep it at room temperature for at least an hour prior to consumption. Cut the top off and scoop the interior out with some breadsticks or crudités.

Using the milk of their own flock of 2,000 high yielding Awassi sheep, the dairy has been producing award winning, raw milk, torta style cheeses, made using cardoon thistle rennet, since 1996. Situated in the National Park of Castronuño the sheep graze on high quality pastures with many aromatic herbs, producing excellent milk.
