The village of Villaluenga del Rosario sits at an altitude of 860m in the province of Cádiz in Andalucia; the flocks of indigenous Payoya goats that graze here are milked to produce the Payoyo cheese.

It is semi hard with fresh floral and herbaceous notes, it has a gentle acidity, hints of nuts and a long, clean finish
