Made with pasteurised organic Manchega sheep's milk and traditional rennet.
The texture is moist and semi-hard, the aroma is milky, sweet with hay notes. The flavour is mild, lactic and caramelly.
Ideal served with some or fig and almond wheel and a glass of light red wine like a Mencía.
Note: Leave the wedge at room temperature for about half an hour before eating.
