Conservas Nardin only buys anchovies caught in the Cantabrian Sea; their boquerones (pickled, white anchovies) are made from fresh fish that are marinated for about 8-12 hours in white wine vinegar before being removed, filleted and packed in olive oil.
They are firm but juicy with an excellent balance of acidity and richness.
