Milk type: raw ewes' milk

From: Zamora, Castile and Leon

Net weight: approx. 3kg Whole cheese, 1.5kg Half, 750g Quarter, 375g Wedge.

This excellent example of cured Zamorano comes from a dairy which uses the milk of its own herd of Castellana sheep.

The cheese has rich, buttery, savoury aroma, the paste is dense, hard and firm. The flavours are meaty with a gentle sweetness and hints of fresh straw and cereals; the aftertaste is long.
