This delicious cheese is made with the milk of the endangered Merina de Grazalema sheep at an altitude of 850m in the mountains of the province of Cadiz.

Coated with lard and wheatgerm, it has a rich, acidic aroma; the texture is dense but crumbly and it has intense savoury flavours with notes of caramel, toasted almonds and leather.
