As with the majority of Christmas specialities, this yema tostada (toasted yolk) turrón is predominantly made of almonds and honey combined to give a soft, yielding marzipan.
Made from 60% indigenous Marcona almonds, blanched and then ground, the result is rich, deeply nutty and not too sweet.

Mels Alemany is located in the tiny mountain village Os de Balaguer in the west of Catalonia. The large areas of uncultivated land make it ideal for the production of honeys such as wild thyme and rosemary and they select other varieties from different regions of Spain.
