The Castellano chickpeas from Zamora is one of the most appreciated chickpeas in the world.
Its soft flavour and its almost inappreciable skin make it a highly valued chickpea. With an intensely nutty flavour, it is yellowish, spherical and has a smooth surface with marked lines. Intensely nutty and with a very fine skin the texture is greasy and delicate when cooked. Planted in mid Winter (February) it is harvested in mid Summer (July) 12h soaking in cool water.
