The word encurtido in Spanish refers to pickled foods, particularly vegetables, ranging from lupin seeds (altramuces) to baby gherkins (pepinillos), caperberries to garlic.
They provide flavour and textural contrast to a range of meats and cheeses. These tiny gherkins are crunchy and lightly acid and pair well with strong cheeses.
