Morcón is a type of coarse cut chorizo that is a speciality of south western Spain. Produced from the meat of acorn fed Ibérico pigs, succulent presa meat is combined with a small amount of rich, nutty fat and stuffed into a piece of large natural casing.
Cordoba, where COVAP is based, is the home of the largest evergreen oak forests in western Europe, where the Ibérico pigs fatten for the last few months of their lives. The morcón is sweet and tender with a gentle smokiness and a long, intense aftertaste.
For best results, remove from fridge at least 30 minutes before serving.
