Slow-dried and hand cut "tallarin"-shaped pasta with spinach.

Pastes Sanmartí has been hand-making pasta since 1700s using only flour from Andalusian wheat and hot water from the mineral rich thermal springs of Montbui.
Whilst pasta is perceived as an almost exclusively Italian ingredient the Catalans have been making it for hundreds of years. Serve with Manchego Pesto or stir in some fresh goat's curd.
