This is a cheese from Asturias, one of the regions that is part of "Green Spain", so called because of the abundance of rain and vegetation in the area.
La Peral has a yeasty, briny aroma and the paste is ivory coloured, lightly speckled with blue moulds. The taste is mild, creamy and mushroomy, developing a bit of spice as it matures.
