Produced in Jerez, Andalucia, using a meticulous and traditional process, this sherry is created using a blend of Palomino and Pedro Ximénez grapes. These are fermented and then aged separately in a solera system, which involves a series of barrels where younger wines blend with older ones, ensuring consistency and complexity over time.
This sherry complements aged cheeses, especially blue cheese and Manchego, as it enhances their creamy textures and complex flavours.
