Sherry vinegar is one of the most distinctive tastes in Spanish cooking and this example is made with PX dessert sherry grapes.
Made in the balsamic style, with grape must added to vinegar, and aged in American oak barrels for 12 years, the result is a delicious vinegar with aromas of dried figs, raisins and plums.
