ingredients
- 700g butter beans, rinsed and drained

- 4 marinated artichokes, chopped

- 1 tbsp extra virgin olive oil, plus extra to drizzle

- 2 tsp lemon juice
- ¼ tsp salt
- a small pinch white pepper
- 3 tbsp cold water
- parsley leaves for garnish
METHOD
- Put all the ingredients, except water, in a food processor and pulse until fairly smooth.
- Add water and pulse to incorporate.
- Serve lightly drizzled with olive oil and garnished with parsley.
