Codium spp. is a seaweed which is clam-like on the palate and ranges across the colour spectrum from light to dark green. Like other seaweeds, it is rich in minerals, fibre and protein. It is eaten all over the world, can be used as a garnish and even to accompany spirits such as whisky.
