This small log-shaped cheese has a thin delicate ash-covered rind, covering an unctuous paste. Soft and unctuous texture with melting nuances.
Fresh lactic aromas, with a creamy goaty flavour and hint of spice.
Pairs well with: saffron honey, berries, jams, sunflower and pumpkin seeds as well as breadsticks.
The Dairy
Moluengo is a second generation family run dairy run by Jose Luis and his wife Marta.
They have their own herds that are thoroughly looked after. The goats graze freely in different fields depending on the season. The livestock graze during spring in the farms adjacent to theirs, where they grow oats, barley, and fescue. In summer they graze in the stubble fields. Sometimes they continue grazing in autumn, after the grape harvest, where the leaves from the vineyard make for an exquisite goat snack.
Jose Luis was one of the pioneers of lactic cheese crafting in Spain. His approach was inspired by French recipes (Moluengo is very similar to Sainte-Maure de Touraine) but using the Spanish terroir. Of an excellent quality, Brindisa is proud to be the home of Spanish lactic cheeses in the UK.
