GOATS CURD AND PEACH PANCAKES

Navarrico hand-peeled peaches and goats' curd make for a dreamy combination. A lovely marriage of sweet, fragrant peaches with the creamy, yoghurty flavours of goats' curd. If you're feeling indulgent, add a drizzle of honey and sprinkle with toasted Marcona almonds for a crunchy texture.

ingredients

  • 1 cup of plain flour
  • 1 cup of milk
  • 1 medium egg
  • Navarrico hand-peeled peaches

  • Goats' curd

Method

  1. Combine 1 cup of plain flour, 1 medium sized egg, 1 cup of milk and a pinch of salt in a bowl and mix until smooth. Cover and set aside for 5 minutes.
  2. Heat a medium non-stick pan over medium heat. Add a bit of butter to the pan. 
  3. Pour 1 cup of the mixture into the pan so that the mixture covers the whole of the pan. 
  4. Cook the pancake for about 1 minute or until the underside is golden, then either use a spatula to turn it over or if confident enough, flip it in the air to turn it!
  5. Cook all the pancakes like this until golden. 
  6. Crumble up the fresh goats curd cheese with your fingers and layer the cheese and peaches generously in the pancakes.
  7. Pair with a glass of blood orange juice and enjoy a sweet but savoury breakfast.
