- 700g potatoes, scrubbed with skin on
- 100ml Arbequina olive oil
IN STOCK
- 50ml whole milk
- 2 spring onions, finely sliced
- 1 garlic clove, finely grated
- 1/2 tsp sea salt
METHOD
- Set steamer pan to boil.
- Cut potatoes into 1½ inch pieces, place in boiling steamer and steam until just tender (approx 12 - 15 minutes).
- Transfer potatoes to a large sauce pan and add the remaining ingredients.
- Mash until desired texture.
- Cover and keep warm until serving.
