- 250g Spaghetti
- Extra Virgin Olive Oil

- 200g cherry tomatoes
- 120g Mallorcan sobrasada, mild or spicy

- Traditional Tomato Sauce

- 2 tbsp capers, washed and free of salt

- 2 handfuls of baby spinach leaves
- Galmesan cheese

Method:
- Cook the pasta for 8 minutes in salted boiling water.
- While the pasta is cooking, heat a tablespoon of olive oil in a large frying pan over a medium-high heat.
- Add the cherry tomatoes, season, and cook for 2 minutes, shaking the pan a couple of times.
- Tear the sobrasada into small pieces and add to the tomatoes, followed by the pasta sauce. Half fill the sauce jar with water, pour into the frying pan, add the capers and stir to combine. When the sauce is simmering, pile the spinach on top and cover with a lid while you strain the pasta. Add the strained pasta and a couple of tablespoons of the cooking water to the tomato sauce and stir to combine.
- Serve straight away with a generous grating of Galmesan cheese.
