Guide to Spanish Cheese

Guide to Spanish Cheese

The land of a thousand cheeses. Spain's geographical and climatic diversity makes for a unique range of exceptional cheeses made from cow's, ewe's or goat's milk. There's a variety of different styles including tortas (with a liquid centre), washed rinds, smoked and flavoured. Spain benefits from a thriving artisan and small dairy culture that retains authentic characteristics and traditional flavours.

DISCOVER OUR SELECTION

We've curated a collection of cheese from all across Spain.

Most of our cheeses are artisan, hand-made in small dairies. They vary depending on the pastures the animals have fed on, and the conditions under which they mature.

LONDON CHEESE CAVES

Our Balham warehouse is home to our specialist Cheese Caves. They were designed with the help of José Luis Martín, Spain’s most respected cheese guru – famed for building traditional cheese caves all over Spain. They are lined with authentic terracotta bricks, imported especially from Spain, to help control humidity. These caves allow us to ensure all our cheeses are kept in optimum conditions, so when they reach you at home the flavours are at their best.

They allow us to bring in rare and ‘high maintenance’ cheeses you may not find anywhere else, as they need the right conditions and turning daily.
