Llagar de Oles is an extraordinary vinegar produced in Asturias, a lush region of Spain renowned for its cider-making heritage. This vinegar is made using the minimal intervention Orléans method: the oldest and slowest method of vinegar making. Aged in Chestnut barrels, it is made from apple varieties selected from the harvest of their own orchards. Considered amongst the best Asturian cider vinegars, its moderate acidity makes it a very versatile product.
A traditional product with unique provenance. Our supplier Munar (pictured)has been producing authentic sobrasada since 1942. Made from rare breed Balearic black pigs (porc negre) which have a naturally high fat content, it’s seasoned with paprika made with local varietal Cirereta and Tap de Cortí peppers. Soft, spreadable texture, great on bread or as an ingredient in sauces to add depth of flavour.
In this article, learn all about the Mahón from Menorca. Mahón, or 'Mao', to give it it's local name, is a square cheese with rounded edges and corners. Hand-rubbed with paprika, it has a tangy, sharp flavour and characteristic saltiness that reflects the rich maritime terroir on which the dairy cattle thrive. We age this cheese in our own cheese caves in London, making it truly one-of-a-kind!
