This family-run business in Logroño, in the heart of La Rioja, has been perfecting the art of chorizo-making since 1987, just a year before Brindisa was founded. With around forty dedicated employees, they’ve spent decades mastering their craft, supplying us with some of the finest cured meats for over 25 years.

What makes Alejandro chorizo so special? It all starts with the pork. Rather than focusing on specific breeds, Embutidos Alejandro prioritises quality and consistency, working closely with trusted farmers in Navarra and Aragón. Their approach blends cutting-edge technology with time-honoured techniques: modern machinery ensures precision and hygiene, while traditional methods preserve the deep, unmistakable flavours of their embutidos.

Keeping their range small allows them to focus on quality. Every cut is carefully chosen: shoulder muscles, for example, work beautifully in cooking chorizos but are never used for cured varieties, as they toughen too much when dried.

Letting nature take the lead

Unlike most producers, who rely on commercial cultures for fermentation, Embutidos Alejandro lets nature take the lead. The naturally occurring lactic acid bacteria in their facility kickstarts the curing process, creating a truly unique, terroir-driven flavour profile.

The end product's curing time varies by size: lightly cured chorizo hoops take about a month, while larger pieces, over a kilo in weight, develop their depth of flavour over five months. The result? A chorizo that captures the signature flavours of this region: balanced and intense aromas with a noticeable emphasis on the Pimentón de la Vera (oak-smoked paprika), tied together with a touch of garlic. They have an excellent balance between lean meat and fat, to create the perfect texture, and an intense, smoky, clean and long-lasting taste.
