ingredients

  • 4 garlic cloves, peeled
  • ¼ tsp sea salt
  • 2 egg yolks
  • 125ml Brindisa North & South olive oil

  • 1 tsp / 5ml Valdespino sherry vinegar

  • 1 tsp / 5ml lemon juice

METHOD

  1. Chop the garlic into small pieces.
  2. Place the garlic, salt and egg yolks in a food processor, and and process until the garlic is puréed.
  3. With the processor running add the oil a little at a time until completely incorporated - scraping down the sides of the bowl as required - and process until the mixture has thickened.
  4. Add the sherry vinegar and lemon juice and pulse to combine.
  5. Store in the refrigerator.
  6. Bring to room temperature before serving.
