ingredients
- 4 garlic cloves, peeled
- ¼ tsp sea salt
- 2 egg yolks
- 125ml Brindisa North & South olive oil
OUT OF STOCK
- 1 tsp / 5ml Valdespino sherry vinegar
IN STOCK
- 1 tsp / 5ml lemon juice
METHOD
- Chop the garlic into small pieces.
- Place the garlic, salt and egg yolks in a food processor, and and process until the garlic is puréed.
- With the processor running add the oil a little at a time until completely incorporated - scraping down the sides of the bowl as required - and process until the mixture has thickened.
- Add the sherry vinegar and lemon juice and pulse to combine.
- Store in the refrigerator.
- Bring to room temperature before serving.
