CHORIZO AL VINO

Chorizo al vino (chorizo cooked in red wine) is a classic tapas recipe and is deliciously more-ish! A recipe for any tapas feast or served as a side with roast chicken or with flatbreads for dipping.

  • Spicy Cooking Chorizo 350g

  • 1 tbsp Brindisa Arbequina Extra Virgin Olive Oil

  • 2 cloves of garlic, crushed
  • 300ml Red wine
  • 2 tbsp honey
IN STOCK
  • 1 tbsp flat leaf parsley

Method 

1) Cut the chorizo into even slices.

2) Heat oil in a frying pan. Fry chorizo for around 3 minutes until starting to crisp, then turn over. 

3) Cook for a few minutes on the other side and then add the garlic cloves to the pan, plus the red wine. 

4) Simmer for around 15 mins or until the wine has reduced by half.

5) When nearly done, add the honey and further reduce the liquid. It should be sticky and syrup-like. 

6) Remove from the heat, sprinkle parsley over and serve with crusty bread.
