ingredients
- 1 litre whole milk, divided
- 200g granulated sugar
- 1 star anise
- 1 clove
- 80g corn flour
- 3 tbsp plain flour
- 2 eggs, beaten
- 1 tsp Brindisa Arbequina Olive Oil

- Caster sugar and cinnamon to serve
METHOD
- Heat 750ml of the milk together with the sugar, star anise and clove and bring to the boil.
- In a separate bowl, mix together the corn flour and the remaining 250ml of cold milk.
- Remove the clove and star anise from the hot milk before adding the corn flour paste.
- Cook for a further 5 minutes before pouring the mixture into a shallow tray.
- Chill in the fridge for several hours (preferably overnight).
- When it’s completely set, remove from the fridge and cut into thick slices.
- Roll each piece in the plain flour, followed by the egg wash.
- Heat a little olive oil in a saucepan, and then fry the slices in batches.
- Serve with a sprinkling of caster sugar and cinnamon.
