LECHE FRITA

A caramelized sweet bread pudding that works well served with ice cream.

ingredients

  • 1 litre whole milk, divided
  • 200g granulated sugar
  • 1 star anise
  • 1 clove
  • 80g corn flour
  • 3 tbsp plain flour
  • 2 eggs, beaten
  • 1 tsp Brindisa Arbequina Olive Oil

  • Caster sugar and cinnamon to serve

METHOD

  1. Heat 750ml of the milk together with the sugar, star anise and clove and bring to the boil.
  2. In a separate bowl, mix together the corn flour and the remaining 250ml of cold milk. 
  3. Remove the clove and star anise from the hot milk before adding the corn flour paste.
  4. Cook for a further 5 minutes before pouring the mixture into a shallow tray.
  5. Chill in the fridge for several hours (preferably overnight).
  6. When it’s completely set, remove from the fridge and cut into thick slices.
  7. Roll each piece in the plain flour, followed by the egg wash.
  8. Heat a little olive oil in a saucepan, and then fry the slices in batches.
  9. Serve with a sprinkling of caster sugar and cinnamon.
