  • Señorio morcilla ibérica

  • Piquillo pepper strips

  • Breadcrumbs, preferably panko
  • Catalan oregano
  • Olive oil

METHOD

  1. Heat the oven to 200°C.
  2. Line a roasting tray with foil and very lightly oil.
  3. Take the morcilla - straight from the fridge - remove the casing and cut with a sharp thin knife into thin slices - approx. 6mm thick.
  4. Lay the slices out on the tray with a little space between each.
  5. Sprinkle on top of each slice a little breadcrumb followed by a tiny pinch of oregano.
  6. Lay a strip of Piquillo pepper – approx. ½ the width and 1½ time the length of the morcilla slices – across the middle of each slice.
  7. Finish each slice with a small sprinkle of breadcrumbs on the peppers strips. 
  8. Bake for 4 minutes.
