METHOD
- Heat the oven to 200°C.
- Line a roasting tray with foil and lightly oil.
- Take the morcilla - straight from the fridge - remove the casing and cut with a sharp thin knife into 6mm / 1/4" slices.
- Lay the slices out on the tray with a little space between.
- Sprinkle on each slice a little breadcrumb followed by a tiny pinch of oregano.
- Lay a strip of Piquillo pepper – approx. ½ the width and 1½ time the length of the morcilla slices – across the middle of each slice.
- Finish each slice with a small sprinkle of breadcrumbs on the peppers strips.
- Bake for 4 minutes.
