- 2 egg yolks
- 125g caster sugar
- 125g Ibérico Pork Lard

- 1⁄4 teaspoon vanilla extract
- 1⁄4 teaspoon ground cinnamon
- 250g plain flour, plus extra for dusting icing sugar, for dusting
METHOD
- Preheat the oven to 165°C/gas 3.
- Put all the ingredients, except the flour and sugar, into a bowl and mix into a paste. Add the flour and work in until you have a supple dough – like a shortbread dough.
- Lightly flour your work surface and roll out the dough to about 7mm.
- Lay the dough on a sheet of greaseproof paper, then cut out using a flower-shaped or round cutter (about 4.5cm diameter) and put on to a baking tray.
- Bake in the preheated oven for about 20 minutes, keeping an eye on the biscuits to make sure they don’t burn. They should still be pale, like shortbread.
- Remove from the oven, cool, then dust the biscuits well with icing sugar – as if they have been in a light snowfall.
