MENORCAN FLOWER BISCUITS (PASTISSETS)

  • 2 egg yolks
  • 125g caster sugar
  • 125g Ibérico Pork Lard

  • 1⁄4 teaspoon vanilla extract
  • 1⁄4 teaspoon ground cinnamon
  • 250g plain flour, plus extra for dusting icing sugar, for dusting

METHOD

  1. Preheat the oven to 165°C/gas 3.
  2. Put all the ingredients, except the flour and sugar, into a bowl and mix into a paste. Add the flour and work in until you have a supple dough – like a shortbread dough.
  3. Lightly flour your work surface and roll out the dough to about 7mm.
  4. Lay the dough on a sheet of greaseproof paper, then cut out using a flower-shaped or round cutter (about 4.5cm diameter) and put on to a baking tray.
  5. Bake in the preheated oven for about 20 minutes, keeping an eye on the biscuits to make sure they don’t burn. They should still be pale, like shortbread.
  6. Remove from the oven, cool, then dust the biscuits well with icing sugar – as if they have been in a light snowfall.
