CHORIZO POACHED IN WINE

This poached chorizo or "chorizo al vino" is juicy, heartwarming, simple, and utterly delicious. The recipe is from Monika's book 'Brindisa - The True Food of Spain'. You can do this recipe with wine or cider. Recipe execution and photography: @thecornerplot

ingredients

  • 1 onion, sliced
  • 1x250g fresh cooking chorizo

  • 450ml red wine, such as Garnacha, or cider
IN STOCK
  • 1 bay leaf

Method:

Put all the ingredients into a pan over a medium heat (keeping the chorizo whole) and simmer for 15-20 mins, to reduce the wine or cider and poach the chorizo and onion. Turn the chorizo from time to time so that it colours evenly. Lift out the chorizo and slice it, then serve it with the poached onions and sauce, and some crusty bread.
