ingredients
- Handful of ripe Spanish tomatoes (Barbastro tomatoes if you can get some!)
- Garlic
- Sea salt flakes
- Black pepper
- Arbequina Extra Virgin Olive Oil

Method
1. Blitz the tomatoes in a blender.
2. Toast the bread and rub with a clove of garlic.
3. Spoon over the tomatoes, season well and add a liberal glug of extra virgin olive oil just before serving.
