PAN CON TOMATE

This is a classic pan con tomate recipe by Sophie Rushton-Smith from @THECORNERPLOT which is perfect for brunches, side dishes and lazy summer lunches.

ingredients

  • Handful of ripe Spanish tomatoes (Barbastro tomatoes if you can get some!)
  • Garlic
  • Sea salt flakes
  • Black pepper
  • Arbequina Extra Virgin Olive Oil

  • Spanish bread

Method

1. Blitz the tomatoes in a blender. 

2. Toast the bread and rub with a clove of garlic. 

3. Spoon over the tomatoes, season well and add a liberal glug of extra virgin olive oil just before serving.
