TUNA SANDWICH WITH CAPERS AND GHERKINS

Tuna sandwich with capers and gherkins, a healthy and tasty option for lunch or snack.

ingredients

  • 1 tin Ortiz bonito 250g, drained
IN STOCK
  • 12 Brindisa gherkins, roughly chopped
IN STOCK
  • 1/4 cup saffron mayonnaise
  • 2 tbsp Arbequina olive oil
IN STOCK
  • 2 tsp Valdespino sherry vinegar
IN STOCK
  • 1tbs tiny capers
  • 1 tbsp very finely chopped red onion
  • 30g cooked petit pois
  • Black pepper to taste
  • Basil leaves to garnish

METHOD

  1. In a bowl, combine the tuna, gherkins, capers, peas and red onion.
  2. Whisk together the mayonnaise, olive oil, sherry vinegar and black pepper then stir into tuna mixture.
  3. Garnish with torn basil leaves.
  4. Serve on toasted baguette or good wholemeal bread.
