- 1 tin Ortiz Bonito Tuna in Olive Oil (250g), drained

- 12 Gherkins, roughly chopped

- 12 Caperberries, roughly chopped

- 30g cooked petit pois
- 1 tbsp very finely chopped red onion
- 1/4 cup mayonnaise
- 2 tbsp Brindisa Arbequina Olive Oil

- 2 tsp Valdespino sherry vinegar

- black pepper to taste
- 4 small baguettes
METHOD
- In a bowl, combine the tuna, gherkins, caperberries, peas and red onion.
- Whisk together the mayonnaise, olive oil, sherry vinegar and black pepper. Stir into the tuna mixture.
- Serve on toasted baguettes.
