ingredients
- 270g goats curd
- 4 to 6 tbsp creme fraiche
- 1 clove of garlic
- 25g fresh herbs: a mixture of parsley, chives, tarragon (or chervil), basil
- salt and freshly ground pepper
Method
- Using a spatula, soften the goats' curd and gradually add the creme fraiche until the mixture is soft and pliable.
- Crush the garlic into a fine paste.
- Finely chop the herbs and fold into the curd along with the garlic.
- Season with salt and pepper.
Little tip
The type of herbs you use is entirely up to you, you can use the suggested ones above or a single herb if you wish. You may also want to add a little lemon zest.
