HERBED GOATS' CURD

This versatile herbed goats' curd can used as a sandwich filling or as a dip but is wonderful as a canapé, piped on crostini or blinis.

ingredients

  • 270g goats curd
  • 4 to 6 tbsp creme fraiche
  • 1 clove of garlic
  • 25g fresh herbs: a mixture of parsley, chives, tarragon (or chervil), basil
  • salt and freshly ground pepper

Method

  1. Using a spatula, soften the goats' curd and gradually add the creme fraiche until the mixture is soft and pliable.
  2. Crush the garlic into a fine paste.
  3. Finely chop the herbs and fold into the curd along with the garlic.
  4. Season with salt and pepper.

Little tip

The type of herbs you use is entirely up to you, you can use the suggested ones above or a single herb if you wish. You may also want to add a little lemon zest.
