Villarejo Rosemary Cured Cheese, 2 sizes
Coated in lard and rosemary, this Manchego-style cheese has a dense and lightly crunchy texture, with buttery and herbal aromas. It is full flavoured and savoury, with a long and balanced finish. As with most Manchegos, this cheese is traditionally paired with membrillo. It also works very well on its own or as part of a cheeseboard, paired with a dry white wine or a dry sherry. The dairy opened in 1987 with the aim of producing authentic artisan Manchego cheese, in the municipality of Villarejo de Fuentes. The village, located in the heart of La Mancha, has always enjoyed clean air and a climate perfectly suited to the production of this style of cheese. With more than 1,500 square meters, the facilities are in a privileged location, where the sheep graze freely offering the best milk for their cheeses. Their mission has always been the same: the production of quality artisan cheeses using traditional methods and always opting for a sustainable agri-food chain. Arcano cheese wedge on a decorative tile with a pear in the background.
Arcano Aged Goat's Cheese, Raw
Fudgy & crumbly. Sweet, with hints of toffee. Gold-winner at the World Cheese Awards 2025. An outstanding farmhouse cheese crafted with a genuine commitment to quality and animal welfare. Made using raw milk from their own herd of 1,800 Florida goats, this cheese is produced entirely on the farm, where the animals graze freely across 2,000 hectares of pastureland in the heart of Castilla-La Mancha. Located within the beautiful Cabañeros National Park, the goats live in semi-freedom among holm oaks and Mediterranean scrubland, rotating through different plots to enjoy a naturally varied diet. They are fed with cereals and fodder grown on the farm itself. The cheese is made using the same moulds used in Manchego making and matured for 18 months, an exceptionally long maturation for a cheese this size, resulting in a rich, complex cheese with outstanding depth and balance.
