Our Arbequina oil is produced in Navarra, using 100% Arbequina olives, this varietal is most associated with Northern Spain. These butter beans, or judiones, are carefully cooked to retain their shape and texture. An extra virgin olive oil produced in Navarra, the most northerly commercial growing area in Spain. This oil is made from a blend of olives indigenous to the north of Spain, Arbequina, and to the south, Picual. Whilst the majority of rice in Spain is grown in the delta of the Rio Ebro in Valencia, this rice is cultivated on the Moorish built river terraces of the town of Calasparra in Murcia.  The variety (balilla x sollana) is highly absorbent taking up about 2.5 times its weight in liquid, so it can really show off the flavour of a good stock.
