Using the milk of their own flock of 2,000 high yielding Awassi sheep, the dairy has been producing award winning, raw milk, torta style cheeses, made using cardoon thistle rennet, since 1996. Situated in the National Park of Castronuño the sheep graze on high-quality pastures with many aromatic herbs, producing excellent milk.
