Our 1605 Manchego is made at the Sierra la Solana estate, 150km south of Madrid. Here you can find traditional, rustic Mediterranean vegetation, as well as a harsh and extreme climatic environment, ideal for the native Manchega sheep to roam about. The result is a clean, rich-tasting milk with a sweet and malted cereal finish, which translates into elegant, fruity, intense flavours with a long finish.

This 11-month minimum matured Manchego has aromas of leather and lanolin. The paste is dense and, on occasion, crystalline. It has a complex savoury flavour with hints of caramel and spices and a long, intense finish.

How is 1605 Manchego produced?

The dairy has their own flock of Manchega ewes grazing on the pastures of Ciudad Real. They grow their own cereals to feed the animals in winter. Almost all the work in the dairy is manual, from filling the moulds to turning the cheeses regularly.

What are the required characteristics of a Manchego cheese?

Manchego PDO, as it should be called, has to be made from the milk of the Manchega ewe, a breed which has lived in the area for well over a thousand years. The cheese must be made in Castille La Mancha, made up of the provinces of Toledo, Ciudad Real, Guadalajara, Albacete and Cuenca. The rind must have the herringbone pattern on the rind, traditional on cheeses from Castille.

  • Please note that deliveries are not available on Sundays or Mondays for most of the year, except during peak trading periods in December. Orders placed after 11:00 am on Fridays will be despatched after the weekend for delivery from Tuesday onwards, unless a later date is selected. 
  • Our courier, DPD, will send a notification on the day of delivery with a one-hour delivery window - between 8:00 am and 6:00 pm - to help you plan your day. 
  • You may also specify a 'safe place’ for your delivery if no one will be available to receive it. Please be aware that we cannot request specific delivery times or calls from the driver.
