Pedro Ximénez vinegar is one of the most distinctive tastes in Spanish cooking. This example is made with sweet PX grapes exclusive to the area where the winery is located, in the heart of the Montilla-Moriles Protected Denomination of Origin, in the province of Córdoba.

Made in the balsamic style, with grape must (boiled, reduced grape juice) added to the vinegar, and aged in American oak barrels for 12 years, resulting in a delicious vinegar with a wonderful acidic balance.

Available in 25cl and 75cl.

How do Unico age their vinegars?

The reserva vinegars are all aged in the soleras y criaderas system, similar to the maturing system of sherries. Each year one third of the cask, from the lowest row of barrels is bottled, and these barrels are then refreshed from the solera above combining different ages to create both depth and freshness at the same time.

When was Unico founded?

Unico was founded in the small town of Doña Mencia, Cordoba, in the 1920’s and has vinegar soleras that are over 50 years old. Based within the Montilla Moriles wine DOP they have focused on the production of vinegars that are made with the typical grapes of the region, the same grapes that are used within the Vinagre de Jerez DOP

  • Please note that deliveries are not available on Sundays or Mondays for most of the year, except during peak trading periods in December. Orders placed after 11:00 am on Fridays will be despatched after the weekend for delivery from Tuesday onwards, unless a later date is selected. 
  • Our courier, DPD, will send a notification on the day of delivery with a one-hour delivery window - between 8:00 am and 6:00 pm - to help you plan your day. 
  • You may also specify a 'safe place’ for your delivery if no one will be available to receive it. Please be aware that we cannot request specific delivery times or calls from the driver.
