La Masrojana Black Olive Paste is made from Empeltre olives grown in the traditional olive-growing regions of Aragon and Catalonia in Spain. Family-run since 1977, La Masrojana draws on generations of expertise to create a simple yet flavourful spread. The olives are harvested in late winter, when they develop their characteristic mild, mellow flavour, before being washed, sorted and finely ground using traditional methods. Blended with extra virgin olive oil and salt, the result is an intensely flavoured olive paste with a rounded taste and gentle sweetness. Versatile and full of character, it can be spread on crusty bread or crackers as an aperitif, stirred through pasta for a quick sauce, or used as a marinade base for chicken and fish. It also makes a delicious dip and pairs beautifully with Spanish cheeses and charcuterie.
