Monika's Rare Pulse Club
Step beyond the everyday and discover a new side of Spanish cooking through the Rare Pulse Club, created by Monika, founder of Brindisa. Each edition brings together exceptional heirloom varieties from small Spanish growers, selected for their extraordinary flavour, texture and regional character. Carefully sourced in limited quantities across Spain, these are pulses with a real sense of place, the kind rarely found outside their local communities.
With this box, we explore the remarkable connection between Spain and Greece through three exceptional heirloom pulse varieties. Although separated by sea, the two countries share a deep culinary language built around olive oil, seasonal vegetables, herbs and the quiet ritual of cooking beans slowly.
This collection brings together carefully selected Spanish pulses from some of the country's most celebrated growing regions, reimagined through the cooking of Greek chef Despina Siahuli. Inspired by the surprising similarities between the two cuisines, she has created recipes that honour both traditions, allowing each variety to shine while celebrating the flavours that unite the Mediterranean.
From creamy Catalan Ganxet beans gently cooked with saffron and greens, to richly baked Tolosana Roja beans inspired by Greek-style "Gigantes Plaki" and delicate speckled lentils brightened with orange, mint and romesco, this edition is an invitation to discover how familiar ingredients can tell new stories.
Each box includes
-
1 × 400g Ganxet Beans

About the collaboration
After tasting these remarkable Spanish pulse varieties, Despina was struck by how naturally they echoed the flavours and techniques she grew up with in Greece.
Her recipes celebrate this shared culinary heritage, bringing together Spanish ingredients and Greek influences with a light touch that allows each pulse to express its own unique character.
