1. Perelló Gordal Picante Olives: plump, giant, juicy olives spiced with guindilla chillies. Delicious as they are, or served stuffed with orange and oregano. Find the recipe here.
2. Alejandro Semi-Cured Chorizo Hoop, with Perelló Pickled Guindilla Chillies on the side.
3. La Retorta raw sheep’s milk cheese with traditional cardoon (thistle) rennet, paired with Mariñeira Ship’s Biscuits. Bring the cheese to room temperature before serving, then slice off the top and dip the savoury biscuits in.
4. Gildas, a Basque Country bar staple of cured fish with pickles. Combine the olives, anchovies, pickled gherkins and guindilla chillies on a cocktail stick. For more inspiration and variations, see here.
5. Handmade, 11 month aged Manchego from Quesería 1605, simply paired with Membrillo quince paste.
6. Galician Mussels in escabeche. To add a touch of freshness and colour, drain the mussels from their tin, keeping the marinade to one side. Finely chop 1 medium, ripe tomato, or 2 cherry tomatoes, a quarter of a medium red pepper and the white of a spring onion and mix into the marinade. Put the mussels in your chosen serving plate, and spoon the marinade on top. Serve with the crisps.
7. Extra Virgin Olive Oil Crisps, excellent with the Galician mussels and a dash of hot and spicy smoked paprika sauce.
8. Hand-carved, Acorn Fed, 75% Ibérico Ham, to be taken out of the fridge before serving to allow it to come to room temperature.
