Perello Gordal Spicy Pitted Olives Jar 150g
These Gordal olives are green, crisp and fleshy with a touch of heat from the guindilla chillies in the marinade. With a different recipe from our tinned variety, these Gordal olives have a slightly cleaner flavour with a pleasant acidity and come in a resealable jar. These Gordal olives have a firm texture and a rich taste with a lovely balance between oiliness and acidity. An intense and juicy flavour bursts from these huge olives.   The Gordal Reina (Queen) variety comes from Sevilla in Andalucía. They are grown in Alcalá de Guadaira, Utrera and Los Palicios and are harvested between September and October. Serving suggestion: They are delicious when eaten straight from the jar. For a quick and tasty snack, stuff them with orange segments and marinate with olive oil and herbs like oregano.

a jar of Brindisa Bouquet de Flores Orange Marmalade with a twirl of orange peel and three oranges, one halved
Brindisa Bouquet de Flores Orange Marmalade, 300g
Valencian citrus, from orchards dedicated to biodiversity. Made in small batches in the UK. Unique! This marmalade is part of a Brindisa project exploring small-batch, high-quality foods that celebrate the connection between the Iberian Peninsula and the UK. At its heart is the Todolí Citrus Foundation, founded by Vicente Todolí to preserve his family’s citrus-growing heritage in Palmera, on the Mediterranean coast near Valencia. The orchard houses nearly 500 citrus varieties, and focuses on flavour over commercial traits. We discovered their extraordinary fruit through Shrub in London and, after testing a few varietals, chose the Bouquet de Flores bitter orange for its delicate sharpness, bright tang, and beautiful titian colour. Working with England Preserves in Bermondsey, we created this vibrant marmalade. The peel candies into fine slivers, while the flesh becomes a golden, jelly-like preserve with a flavour reminiscent of lemon curd—elegant, fragrant, and full of character. Made in very small batches with limited fruit, this marmalade is available exclusively through our shops and website.

La brujula mussels pack - Brindisa Spanish FoodLa brujula mussels - Brindisa Spanish food
La Brujula Galician Mussels in Escabeche, 110g
These top quality mussels are cultivated in the Galician estuaries in floating platforms called bateas. From the Ria de Arousa, the largest mussel farm in the world, they are larger and meatier than most. To prepare them to gourmet standards their hairs are cut with scissors to get a smoother mussel. They are boiled and then fried before being hand packed in a gentle, very fine, marinade made from fresh ingredients. These mussels are large and meaty and the escabeche is very gentle, warm with a slight sharp finish. The simplest way to serve these is to top a Sarriegui crisp with a mussel and down it in one or just with a piece of freshly baked sour dough. From the book "Brindisa - The True Food of Spain": "To add a touch of freshness and colour, drain the mussels from their tin, keeping the marinade to one side. Finely chop 1 medium ripe tomato, 1/4 medium red pepper and the white of spring onion and mix into the marinade. Put the mussels back in the tin and spoon the marinade over the top." Llagar de Oles Asturian Apple Cider Vinegar, 500ml
Llagar de Oles is an extraordinary vinegar produced in Asturias, a lush region of Spain renowned for its cider-making heritage. This vinegar is made using the minimal intervention Orléans method: the oldest and slowest method of vinegar making. Aged in Chestnut barrels, it is made from apple varieties selected from the harvest of their own orchards. Considered amongst the best Asturian cider vinegars, its moderate acidity makes it a very versatile product.Taste profile: Aromas of fruit with notes of wood, complex and balanced cider flavours with hints of butterscotch. You can really taste the distinctive, crisp cider flavour. This vinegar pairs particularly well with roasted pork, but is also a great all-rounder in stews, pickles, fish and all kind of salads. Or try mixing it with carbonated water for a healthy, refreshing drink. Cook and vinegar expert Angela Clutton says "This cider vinegar was a total revelation to me when I first tried it! It is so different to so many cider vinegars – not least because it actually tastes of apples! It is made in a traditional style in the very special cider region of Asturias in the north of Spain.  It’s a delicious and versatile vinegar that’s perfect for pickles, fish and all kind of salads."
