The Alemany chestnut honey is harvested in the summer in Galicia, Burgos and Leon. It has a dark amber colour, almost opaque, with a floral, slightly woody aroma. The flavour is deep with hints of saltiness. Delicious eaten simply on toast or drizzled over fresh cheese. This product has been awarded with 1 star in the Great Taste Awards 2016. The judges' comments were: "Beautiful sap like colour. Pleasing texture. Strong upfront floral flavour with hints of caramel. Dark and slightly opaque, not overly sweet, with an almost peaty layer within the flavour."

Unsalted marconas are especially good for cooking and baking. Their beautiful creamy, smooth texture and sweet almost buttery flavour is due to their richness in almond oil.

This paprika is produced in the La Vera DOP in Extremadura from peppers that have been grown in one of the 52 villages within the DOP. The peppers are smoked by the growers before being sent to the factory where they are ground in ancient stone mills. This coarse ground pimentón is smoky and spicy with a pleasant warmth.

These small fruit wheels from Paiarrop are made only using two ingredients: pressed whole pitted Deglet Nour dates and Marcona almonds. The Marcona almonds are the very best that Mediterranean Spain produces: moist, and rich in oil for extra flavour. Dates are full of energy and fibre so they are a very healthy sweet snack. This wheel is ideal eaten thinly sliced on its own, or as an accompaniment to a Spanish cheese board.

The most expensive spice in the world has long been used in the Moorish influenced south of Spain. Each stigma is still picked by hand and it takes 250,000 flowers to produce 1kg of saffron. This high quality, Mancha grade saffron is grown in Iran, which is responsible for 90% of global production.

Rich, earthy, hint of bitterness. Cut off top, scoop and share like a Vacherin. Traditional Torta. Winner: Silver at the World Cheese Awards 2023 There is a tradition in south-west Spain, and over the border in Portugal, of making ewes' milk cheeses using cardoon thistle rennet, resulting in  full-bodied cheeses with a soft, sometimes liquid interior. Queserías de Barros makes an excellent example using the milk of the indigenous Merino sheep. The cheese has an earthy aroma and the soft paste is creamy, rich, salty and full flavoured with a hint of bitterness on the finish. An extra virgin olive oil produced in Navarra, the most northerly commercial growing area in Spain. This oil is made from a blend of olives indigenous to the north of Spain, Arbequina, and to the south, Picual. Whilst the majority of rice in Spain is grown in the delta of the Rio Ebro in Valencia, this rice is cultivated on the Moorish built river terraces of the town of Calasparra in Murcia.  The variety (balilla x sollana) is highly absorbent taking up about 2.5 times its weight in liquid, so it can really show off the flavour of a good stock.

These large, "Castellano" chickpeas are processed in Navarra before being tinned. Finca Pascualete is an interesting example of this unique style of cheese. La Retorta has a smooth, dense and creamy texture and ochre, pungent rind with aromas of mustard and dry hay. Tolosana black beans cooked to exactly the right texture, ready to eat. They are originally from the town of Tolosa in the Basque Country. They are preserved in the same liquid they were cooked in, keeping all the flavour and characteristic reddish black colour. Use the aquafaba (liquid) for cooking and thickening sauces. They are creamy and melting which makes them perfect for use in stews with Morcilla or Chorizo, in salads or side dishes. An excellent product if you want to make real fast food.
