These manzanilla olives are green, with a firm and meaty texture and are slightly spicy with a lightly bitter, briny flavour. Ortiz bonito tuna (Thunnus alalunga) is a smallish tuna generally weighing less than 20kg. All of the fish that Ortiz buy is caught on rod and line in the Bay of Biscay and then processed by hand. The flesh is a pale colour and has a delicate flavour that is at its best when eaten simply, in a salad for example.

Ventresca, or belly, has long been considered the most desirable and valuable part of the tuna. Removed and processed separately from the rest of the fish it is cooked very gently to retain its texture and flavour. It comes in long tender flakes whose high fat content give it a deliciously melting texture and mild but rich flavour.

These figs are picked underripe and green, whilst still firm, they are then put into a marinade of vinegar, sugar and spices. The result is a sweet/sharp fruit that makes a delicious accompaniment to hard cheeses or many kinds of cured charcuterie.

This cocktail mix contains green olives, black olives, small gherkins and baby onions. With a hint of spiciness and a light pickle, they are delicious at any time. Vibrant yet delicate, aromas of mandarin thanks to this blend of Albarino, Loureio & Caino grapes. A wine of great aromatic complexity, crisp aromas of mandarin, ripe melon and orange peel develop to delicate mineral, earthy and orange blossom notes. It is creamy with mineral touches that together with its fresh and mild acidity, offers aa pleasant and intense wine with a long finish. Best with Galician cuisine.

Coated in lard and rosemary, this Manchego-style cheese has a dense and lightly crunchy texture, with buttery and herbal aromas. It is full flavoured and savoury, with a long and balanced finish. As with most Manchegos, this cheese is traditionally paired with membrillo. It also works very well on its own or as part of a cheeseboard, paired with a dry white wine or a dry sherry. The dairy opened in 1987 with the aim of producing authentic artisan Manchego cheese, in the municipality of Villarejo de Fuentes. The village, located in the heart of La Mancha, has always enjoyed clean air and a climate perfectly suited to the production of this style of cheese. With more than 1,500 square meters, the facilities are in a privileged location, where the sheep graze freely offering the best milk for their cheeses. Their mission has always been the same: the production of quality artisan cheeses using traditional methods and always opting for a sustainable agri-food chain.
