PICOS BLUE CHEESE, MARCONA ALMONDS & ORANGE SANDWICH

ingredients

  • 100g Picos de Europa blue cheese (trimmed weight)
  • 125ml Crème fraiche
  • 1/8th tsp cayenne pepper
  • 75g toasted* Marcona almonds, roughly chopped
OUT OF STOCK
  • Chicory leaves
  • 100g orange paste, thinly sliced
  • Baby spinach leaves
  • 8 Slices wholegrain bread

METHOD

  1. Mash the cheese, crème fraiche and cayenne pepper into a paste then stir in the almonds.
  2. Build the sandwich: cheese paste, chicory leaves, orange paste slices and spinach leaves.

FOR THE TOASTED MARCONA ALMONDS

  1. Heat the oven to 160°C / fan oven 150°C; spread the almonds out to a single layer on a baking tray.
  2. When oven comes up to temperature roast the almonds until lightly golden brown (approx. 12 minutes), rotating the tray once or twice to roast the almonds evenly.
  3. Cool the almonds completely before storing.

BLUE CHEESE DRESSING WITH PICOS DE EUROPA

  1. Whisk together: 3 tbsp Picos de Europa mixture, 3 tbsp Brindisa Arbequina olive oil and 1 tbsp Union Cabernet Sauvignon Vinegar.
