  • 100g Valdeon Blue cheese
  • 125ml Crème fraiche
  • 1/8th tsp cayenne pepper
  • 75g toasted* Marcona almonds, roughly chopped
  • Chicory leaves
  • Paiarrop Membrillo Quince Paste

  • Baby spinach leaves
  • 8 slices whole grain bread

METHOD

  1. Mash the cheese, crème fraiche and cayenne pepper into a paste then stir in the almonds.
  2. Build the sandwich: Spread the quince paste, then the cheese paste add the chicory and spinach leaves.
