The Eíriz bellota ham is made from free range pigs of 100% Ibérico breed that have fattened up on acorns on the dehesa of Extremadura for 10-12 weeks. The hams are then expertly cured in Jabugo in Huelva, one of the most famous Ibérico ham curing towns in Spain.  This ham has been cured for 3 years to create intense, complex flavours and aromas. Jamones Eiriz have been producing Ibérico hams in the town of Corteconcepción, situated in the mountains of the Sierra de Aracena, north of Seville, since near the beginning of the 19th century. Their artisan production methods keep things as traditional as possible and create some remarkable hams. For best results, remove from fridge at least 30 minutes before serving. How to enjoy: Place the slices on a warm plate for the fat to melt slightly. Winner: Silver at the World Cheese Awards 2023 There is a tradition in south-west Spain, and over the border in Portugal, of making ewes' milk cheeses using cardoon thistle rennet, resulting in  full-bodied cheeses with a soft, sometimes liquid interior. Queserías de Barros makes an excellent example using the milk of the indigenous Merino sheep. The cheese has an earthy aroma and the soft paste is creamy, rich, salty and full flavoured with a hint of bitterness on the finish. Unico Aged Balsamic PX Vinegar
Dried fig, raisin and plum flavours from sweet Pedro Ximénez grapes. Aged for 12 years in oak barrels. Pedro Ximénez vinegar is one of the most distinctive tastes in Spanish cooking. This example is made with sweet PX grapes exclusive to the area where the winery is located, in the heart of the Montilla-Moriles Protected Denomination of Origin, in the province of Córdoba. Made in the balsamic style, with grape must (boiled, reduced grape juice) added to the vinegar, and aged in American oak barrels for 12 years, resulting in a delicious vinegar with a wonderful acidic balance.Cook and vinegar expert Anglea Clutton, says "Pour a little over griddled langoustines, soups (especially gazpacho or ajo blanco), ice creams, roasted fruits, or Spanish cheeses. Coated in lard and rosemary, this Manchego-style cheese has a dense and lightly crunchy texture, with buttery and herbal aromas. It is full flavoured and savoury, with a long and balanced finish.
