These cooking chorizos, spiced with mild- and hot-smoked paprika, are free from any artificial colourings or preservatives and are an excellent ingredient in many different dishes. At their best poached in wine or cooked in a casserole, they add a depth of flavour, a hint of smokiness and a beautiful colour to whatever they are cooked with. This product has been awarded with 1 star in the Great Taste Awards 2016. The judges' comments were: "Plump, generously sized sausage with a good colour, nice presentation, not a traditional chorizo appearance. The flavour is good and spicy. Juicy and smoky from the paprika."

This sliced salchichon is made from the meat of iberico pigs that spent 10-12 weeks fattening on acorns on the dehesa of Extremadura. This salchichon (equivalent to an Italian salami) is simply seasoned with salt and black pepper, allowing the rich flavours of the acorn fed pork to come clearly through. This product has been awarded with 1 star in the Great Taste Awards 2016. The judges' comments were: "Lovely fatty sheen to the meat. Sweet aromas with a slight pepperiness. The sausage has a good mild porky flavour with sweetness from the fat. Pepper seasoning is well observed."

Aromatic lard for roast potatoes and baking. This product is made from the famous ibérico pigs of Spain, world renowned for its flavour and aromas. It is produced by rendering down the plentiful fat of the animals to produce a smooth, aromatic lard. It can be used as a cooking fat in making roast potatoes or in baking, to make beautifully light pastry.

This sauce is a classic base for many Mediterranean dishes. The rich tomato and sweet onion flavours match equally well with fish, meat or vegetables. Add herbs, chillis or capers to customise it to your tastes. The almond and tomato gazpacho has delicious creaminess on the tongue, with a bit of texture from the almonds, and a beautiful balance of sweet nuttiness and ripe tomato acidity, brought together by the richness of Andalusian Extra Virgin Olive Oil.

Best Before Date: 20/10/2026 Refreshing, richly earthy, nourishing. Sweet fruitiness, depth of ripe tomatoes. Hint of cumin.  The beetroot gazpacho is a beautiful deep purple; it combines a rich earthiness with sweet fruitiness and the depth of ripe tomatoes, balanced by a well-judged touch of red wine vinegar and Andalusian Extra Virgin Olive Oil. It has a hint of cumin on the finish.  Combining earthiness, sweetness and acidity, this is a beautifully balanced gazpacho.

Gazpacho is probably the most familiar and iconic Andalucian recipe. Using ripe, flavoursome tomatoes along with cucumber, onion, peppers, olive oil and sherry vinegar, the soup is fresh and vibrant with a depth of flavour and a refreshing, balanced acidity which makes it perfect for a hot summer's day. Spanish black pudding. Dense with rice, fragrant with cumin. Slice and fry or grill. Like the UK, Spain has many regional variations of black pudding, known as morcilla in Spanish. Morcilla de Burgos originates in Castilla y León and has a dry firm texture, due to the inclusion of rice, and shows a Moorish influence in the use of cumin as a seasoning. Approximately 285g

This Balilla × Sollana variety is particularly well suited to traditional arroz al horno (oven-baked rice) and arroz caldoso (soupy rice) dishes, delivering excellent texture across both styles of cooking. Brindisa sources this rice from the Co-operativa del Campo Virgen de la Esperanza, a respected producer that cultivates several traditional rice varieties in the region.

Smooth flavour, with perfectly balanced levels of salt and a pleasant aroma. The texture is even and non-fibrous.

Cecina is a traditional product that has been made in the north of Castile and Leon for many hundreds of years. The best is reckoned to come from Astorga, where the quality of the cattle, high altitude and cold, dry winters provide the perfect conditions for its production.  Rich, and deep flavoured with a hint of iron and a distinct flavour from the natural smoking process. This product has been awarded with 1 star in the Great Taste Awards 2024. The judges' comments were: "Deep, rich, attractive colour on these very lean thin slices. Very subtle smoky overtone on rich, sweet tasting beef which is so tender it melts on the tongue. A good moisture level, rich and with complex flavours from the natural smoking, the iron comes through well."

These thin and crisp sweet rolled wafers are simply made with butter, flour and sugar to produce a light, rich delicious biscuit which slightly resembles a cigarette, from which it gets its name. Perfect with a cup of tea or coffee, they can also be filled with cream or creme fraiche and served with marinated fruit. Handmade bakes, traditional in Andalucía. Endlessly versatile and perfect for grazing boards. Regañás are a traditional cracker from Andalucía. Ubiquitous in southern Spanish culture, they often grace tables instead of fresh bread. They are made with extra virgin olive oil and sesame and are shaped and cut by hand. Originally, these crackers were distributed among ship crews, who were often confined for long periods of time, and this was a long shelf life product to carry with them. Perfect for hummus or roasted aubergine dip.
