PAPRIKA TRUFFLES

ingredients

  • 250g dark chocolate
  • 250g cream 35% fat
  • 25ml cognac
  • 10 tbsp cacao powder
  • 1 tbsp La Chinata smoked paprika mild

METHOD

  1. Heat the cream, mix in the chocolate, add the cognac (or brandy), then let the mixture cool down.
  2. Shape the truffles by hand into balls about the size of a large olive.
  3. Sprinkle them with the cocoa mixed with the paprika (roughly 10 parts cacao to 1 of paprika).
